So, this is a wild pastel de choclo.

It has two layers. The bottom one is made with soy meat (or any faux meat you’d like to use, I think soy meat suits better), which is cooked with some tiny chopped onions. You can also put black olives or tofu (to replace egg, which the traditional recipe has. I’ve never done so). The top one is the most delicious food ever. It’s basically corn (maize, this baby) with basil. You just grind the corn and the basil.

When preparing the bottom layer, the first thing you do is stir frying the onions and adding a bit of sugar. Then, you add the soy meat, and some salt. And it’s ready (you may find some other tasty dressings to add, but I don’t know what to suggest right now!). The corn (may be frozen corn, that’s the one I use), is cooked, and then with some water, you grind it. You add basil and some sugar. Then, you put the bottom layer on a plate, and the top layer over it. And you put it on the oven until it’s crusty on the top.
And that’s the secret.
